What year GSX cams will fit in a 2004 Bandit 600, and is it worth it?

I assume you mean GSX-R cams, which would be wilder than GSX or GSX-F cams (which will be similar if not the same as GSF cams). If that's the case, 1985-1991 GSX-R750 cams.

The hottest ones would be from the '89 GSX-R750R homologation special(not the standard GSX-R 750). These are probably too hot for a 600 with stock compression and carbs. Next hottest would be the '90-'91 standard GSX-R 750 cams. These are the ones typically chosen by folks hot-rodding 600/750/1200 Bandits and I believe are the ones offered by Holeshot.
