You actually have another option: Kevlar. It's also stronger than leather.

Motoport makes a custom-fitted Kevlar racing suit, the only one accepted by FIM. It breathes and will be much cooler than leather, especially when someplace like Road Atlanta. Check it out:

I am rather cheap and I found a Field Sheer Carbon Fang 1, full one piece for $299 at motorcycle closeouts.
I also found a Teknic Chicane for $325 and new enough leathers, brand new.
Im big 52-54 chest and I think Ill go with one of these for now. If track days turn into a regular thing I would like to have a top quality one piece.

Thumbs up for Motoport gear!  I have their Ultra II jacket and pants and, styling considerations of the jacket aside, I love it.  I made my girlfriend buy their jacket and pants (she's got GPII jacket) before taking her on the back of my bike.  She also likes it, and GPII actually looks pretty good.  They will also put two layers of kevlar for track use.  On the downside, it takes 3 months to get the order done.

Tell me about it. I just got the top half of my AirMesh Kevlar jacket...

...and I'm going to have to wait 'til mid-June for the pants. Not too crazy about the arnor, tho. I think I'm going to put some Dianese armor in there instead.
