I've seen a pair of ZXR 400/600 cans for sale cheap.

Has anyone upgraded their Bandit 400 exhaust using these cans (got a faint memory of reading about it on this forum, but can't find the thread)?

I'm thinking about possibly mounting them high, from the pillion pegs, and getting a custom pipe fabbed up to run from the pipes to the header.

Anyone got any advice?

Anything with a 2" pinch style connection will work.  I've got a higher-than-stock custom set up  It hangs from a cut passenger bracket.  Looks good IMHO.
